* Exported from MasterCook * Great Guac Recipe By :Dean Smiley Serving Size : 4 Preparation Time :0:20 Categories : Appetizers Dean Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 or 4 large avocados -- halved and seeded 1 small onion -- chopped fine 1 medium tomato -- chopped fine 3 medium jalapeno peppers -- chopped fine 1/8 teaspoon cayenne 1/2 teaspoon salt 3 teaspoons horseradish 4 tablespoons sour cream 1 teaspoon lemon juice, bottled 1/2 teaspoon cumin Slice ripe avocados lengthwise and seperate by twisting the two halves opposite each other. Remove seeds, spoon meat into bowl. Peel and de-seed the tomato. Remove jalapeno seeds and veins. Add all ingredients to bowl and mash well. Cover by placing plastic wrap directly onto the guacamole and working the air out towards the side of the bowl. Keeping the air from the mixture will prevent it from turning brown. Refrigerate for at least an hour so flavors can blend. If covered well this will last a couple of days. - - - - - - - - - - - - - - - - - - - NOTES : Wonderful as a dip or topping. The 1/8 teaspoon of cayenne adds a little heat. Adjust as desired.
